I am back

Nobody reads by blog anyways, but I am going to try to get back into blogging. IT's been a tough year and I went back to crocheting, was sick for 4 months. Then the holidays.

This week for dinner I made this dish Rosemary Chicken with mushrooms and caramelized onions. This was so good, the gravy was flavorful.  I didn't use the flour to coat the chicken cause I am still doing the low carb lifestyle. I did however use flour to thicken my gravy as you normally don't eat all the gravy. At least I don't. It's definitely worth a try. Here is the link for the recipe.

Two Minute Microwave Coffee Cake

Last night's dinner was just dinner LOL no recipe, steak seasoned with all purpose seasoning salt, veggies in copy cat recipe of Olive Gardens dressing. Husband and daughter had salad. That is it, boring

For breakfast thou, getting a bit tired of eggs and bacon, there is only so many ways and they still end up being just eggs and bacon LOL. So I decided to try Ginny's two minute coffee cake.
5 star recipe, it's by Ginny's Low Carb Kitchen. She has some great 
recipes if you get  chance check out her blog. This was really good, but a bit 
sweet for me, next time I just need to cut the sugar in half. I really liked it.

Low Carb bread

As you know this has been one of my missions since I have started this lifestyle. Now I am not biggest bread eater but I am a picky bread eater. I miss it most with my eggs in the morning. I have finally made a bread that I really like.  I can't take all the credit for the bread cause it started with someone's recipe.
The best part is that you cook it in the microwave. YES fast and easy can't be better than that. The original recipe French Toast in a Bowl by Brianna Thomas .
This is my recipe for the bread. I didn't think to take a picture, if I remember in the morning I will make another piece and take pics.

Microwave Low Carb Bread

3 T oat fiber
1 T ground golden flax - sometimes I use this, it gives a bit of texture. Most times I use 1 Tbsp of Psyllium Husk plain
½ tsp. baking powder
1/8 tsp  xanthan gum - this is used to make the bread not crumbly. It works 
1 egg
¼ cup water
1 T butter, softened
pitch of salt
I melt the butter a little bit, mix with the egg and water. Mix all the dry ingredient together then add the wet ingredients. Put in a square microwave container. I used a sandwich keeper, looks like a piece of bread. I cook my for a minute and 10 secs which is perfect in my microwave, you will have to see in yours how long it takes. Start at one minute and if the center isn't cook, put in for another 10 secs and keep going till it's cooked.  Try it's delicious 

Best Ever Baked Pork Chops

These were really good, very tasty pork chops. Now my husband said they were the best pork chops I have ever made, even my daughter ate them. She is the toughest critic to please. If you get a chance try them, they are good. 5 star
These are not low carb but you can make them that. Use Almond flour instead of the bread crumbs or low carb bread.

Oh Bad Me

I have been lacking in the blogging mood lately, can't believe it's been over a month since I last posted. I have been busy crocheting and trying to clean my house, it's just so dirty full of crap. I haven't cooked too many recipes off pinterest, been cooking some favorites. Sometimes I go thru moods where I just don't feel like being creative. It's rather frustrating when you spend the time and money to make a recipes and it turns out just OK. Very disappointing

Now my husband is not a fan of veggies what so ever, he will eat broccoli but only when it's hot LOL. This has become his favorite veggie to eat this way thou. LOL
This is really good 

I was in the mood for a nice stuff pork roast, it's getting cooler here so that makes in the mood for hearty, hot meals.

Baked Sour Cream Doughnuts

I had been craving some plain donuts, yes I am a very plain kind of girl. I love plain donuts. Couldn't find a recipe that was low carb and plain. I found this one. I love sour cream so I tried this recipe. These were good but way to sweet for me. I know the next time I make them I will cut the sugar in half. I did however take one of the donuts the next day and cut it in half and toasted it, then put egg, bacon and cheese on it. It was kind of like eating the McGrindle from McDonald's. It was sweet like that but mapley LOL, It was good thou. And I didn't put the glaze on the donuts either. I give it a 3 rating but will be back once I take half the sugar out and see how they are.

Crispy Oven Fried Fish Bites

I love fish, I could eat it every other day, that along with chicken. These were good. The tarter sauce is awesome. I always made homemade tarter sauce but it was just mayo and sweet pickle relish, plain and simple. This one on the other hand was out standing. Loved it.  I give this recipe a 5 star. Now you can make this low carb by using almond flour or your own low carb flour of choice. My daughter on the other hand had other ideas, she wanted the panko for super crunchy fish and that is what I made for everyone.

Spinach Chicken Parmesan Meatballs in Creamy Tomato Sauce

Haven't tried that many recipes in the last couple weeks. Sunday last week we had the spinach chicken Parmesan meatballs, with spaghetti. This was really good. I did make my meatballs a head of time and put them in the frig till it was time to cook them. Wanted them to meld flavors together. I am so cheated and put all the ingredients for the meat balls in the food processor since I had to grind up chicken for them anyways. My husband said to me, why are they green LMBO. I give this a 4 star rating.

Huli-Huli Pork Steak

I absolutely love pork steak but get bored with just fixing it the same old way. Then I found this recipe and tried it. It's very good.
The recipe is from Home Cooking & Baking. I give this a 5 star rating. My family loved it. The pork was so tender and flavorful. I did make it low carb but replacing the brown sugar with my sugar substitute and 1 tbsp of molasses, low carb ketchup. It was delicious.

Paleo Cinnamon Crunch “Granola”

My hardest part of  the Low Carb/High Fat life style is night time. I have to have a snack before I go to bed, if not I starve all night long, LOL. We eat an early dinner usually around 5 pm. I have since I was a child. So by 7 - 7:30 I am hungry. And I don't want a sweet snack or too salty of a snack, which makes this hard. It needs to fill me up so I tend to eat a lot of nuts but you get tired of them. Lots of celery and peanut butter too. Try a new recipe from Pinterst for a granola type snack. It's really good I do have to say that, it's a bit sweet for me, which the next time I make it I will figure out how to use less honey, or make sweetener water to use instead where as it's not as sweet.

It's very tasty right out of the oven LOL. Didn't add any dried fruit and not sure I will. Cause right now it's a bit high in carbs.  I give this a 4 stars and to be updated when I do it with less carbs. 

Italian Grilled Chicken Recipe


Recipe from Ciao Florentina, This is a really good recipe. I give it 4 stars. My husband and daughter really liked it. Made the roasted red pepper pesto too, to go with it. That was really good too. This one sure is one I will have again. I didn't do the lemon with brown sugar thou. This is a nice low carb tasty dish.

I paired this with a summer squash casserole. Which was supper yummy.

To make low carb just omit the ritz crackers. I used them for my family, I just took them off the top of mine. This was just so good. My husband who is not a fan of yellow squash and zucchini actually had seconds. Giving this a 5 star cause I could eat this a lot. LOL

Low Carb Pizza

I have been trying and looking for an acceptable low carb pizza crust that I could whip up fast for lunch. I am not the biggest fan of lunch so if I have to cook it's very difficult for me. I am one of those people who use to live on peanut butter and jelly cause it was quick. I just don't care to cook just for me. So when Netrition had these ultra thin pizza crusts BOGO and I decided to try them.
They are by Golden Home Ultra Thin 16g Protein Pizza Crust, 3 crusts.

These are really great, they taste awesome and they do bake up nice and crunchy crust.  I made a sausage and onion pizza which is my favorite, using my low carb sauce, which I haven't posted yet but I will. IT was awesome. These get a 5 plus Star rating. Can't wait to buy more.

Low Carb Pork Lo Mein

I tried Shiratake noodles for the first time last week.  I have seen recipes with these noodles since I started my Low Carb/ High Fat lifestyle read all the reviews, from all different blogs and web sites. I went by the reviews and wasn't going to try them. Then Netrition.com had a sale and I saw them for a cheaper price than anywhere else so I thought I would try them. I have a very good sense of smell, I mean I can tell when my neighbors are using their dryers. LOL I have really bad allergies so my nose is very sensitive. I opened the noodles and there was really no smell to them at all, a slight smell but nothing over whelming like others have said.  I rinsed them in water the temperature I normally do dishes in a few times and them left them in the strainer till I was ready for them. That is all I did to them I made up this recipe, Pork Lo Mein which is one of my very favorite Chinese dishes.  This recipe is from i Breathe I'm Hungry.
This was really really good. I did make the mistake of putting too much Sriracha hot sauce in it, it was a tad bit hot for me but I loved it. The flavor was awesome and so where the noodles. I really liked these noodles a lot. They reminded me a lot of rice noodles that the Chinese use. I will definitely be buying more of these noodles. I can't wait to try the ziti and fettuccine noodles. 5 star Recipe

Epic Failures This week

I have had to epic recipe failures this week. The first one I think is more my fault than the recipes.

Easiest & Best Chocolate Brownies.

Will admit my daughter loved them but me and husband however didn't. For me it's mostly cause I am not a fan of Cocoa powder, to me it's very strong. I over baked them a bit cause I forgot about them.  I might try them again adding less cocoa powder and baking them for the right amount of time. LOL 
Recipe is from Satisfying Eats  Giving it a 3 since some of it was my fault. 

I tried the Miracle Rice for the first time. Which I am sorry I wasted it on this recipe. I love, absolutely love rice pudding. The recipe comes fro, Shirataki Noodles Info Blog 
Now I don't know about any one else but this was absolutely GROSS. 
I followed the recipe and the only way I can explain it was it was so gloppy, have  you ever made anything using cornstarch to thicken and added way to much? That is the consistency of that, very thick and goopy.  I added more cinnamon, and nutmeg and that still didn't make it taste better. I threw the whole pan out. Not sure I will try this again, I think I will look for another recipe. This really needs a minus rating. 1 Star Recipe. 


Ranch Burgers with Secret Sauce


These were really good, I changed them a little bit thou. 
I added about a half pound of sausage to the hamburger along with all the other seasonings. I used Smokehouse Onion Cheddar Cheese, which I absolutely love. 
They were really good. They were juicy, and delicious. I give them a 5 Star rating. The special sauce really makes them great. Thou it's not that much a special sauce. LOL Try I think you guys will like them.

For Low Carb just omit the bun. Use reduce sugar ketchup.

Bacon Bourbon BBQ Chicken

Have I got a recipe for you guys today. This recipe deserves more than 5 Stars, it's out of this world.

You have to make these, my husband couldn't stop raving about them. They were that good. I could go for eating them again today. 
To make low carb just substitute the sugars for your sweeteners, that is what I did plus use low carb bbq sauce. You all have to make these.

Raspberry Drop Scones

These by far are the easiest things to make and so delicious. 5 Stars for these.
Even my husband who isn't doing the High Fat/Low Carb lifestyle loved them.
I will admit they were a bit sweet for me, so next time I make them I will be reducing the sugar. And I didn't have any raspberries so I used blueberries, awesome .

You have to make these cause they are great. Fast and easy too.

Best-Ever Sticky Asian Ribs 5 stars


These where awesome. My family and I love the Asian flavors and thou we have had our fair share to yuckie ones, these were great. My husband was in heaven, that is what he said about them. Koodles for me. The recipe is from Apple of My Eye Blog.  I made my low carb by substituting the sugar for a sugar substitute and the ketchup for low carb ketchup.

Chicken Parmesan Burgers 5 Stars

These were the most awesome burgers I have ever made. I am not the biggest fan of chicken parmesan but these I could eat again and again.
The recipe is from Recipe Runner.
Now to make low carb I omitted the bun for me. I did how ever keep the panko bread crumbs. 
Per 1/4 cup - Calories: 100kcal | Fat: 1.00g | Carbs: 20.00g | Protein: 3.00g
which makes 4 burgers so there is 5 carbs from the panko bread crumbs. 

I made my own marinara sauce which I have to say turned out awesome. I will update the post later with the recipe.  I left it in the kitchen.

Broiled Tilapia with Seafood Wine Sauce 5 Stars

This recipe is from Buttoni's Low Carb Recipe Blog
Now this is a Five star recipe. We loved this a lot. 
I didn't use crawfish cause here in Upstate, NY they are expensive and cleaning them to get what little bit of meat from them isn't worth the work. LOL 
I used just crab meat instead.  Even the next day this was so good reheated. Will be making this again.
