Crispy Oven Fried Fish Bites
I love fish, I could eat it every other day, that along with chicken. These were good. The tarter sauce is awesome. I always made homemade tarter sauce but it was just mayo and sweet pickle relish, plain and simple. This one on the other hand was out standing. Loved it. I give this recipe a 5 star. Now you can make this low carb by using almond flour or your own low carb flour of choice. My daughter on the other hand had other ideas, she wanted the panko for super crunchy fish and that is what I made for everyone.

Broiled Tilapia with Seafood Wine Sauce 5 Stars
This recipe is from Buttoni's Low Carb Recipe Blog.
Now this is a Five star recipe. We loved this a lot.
I didn't use crawfish cause here in Upstate, NY they are expensive and cleaning them to get what little bit of meat from them isn't worth the work. LOL
I used just crab meat instead. Even the next day this was so good reheated. Will be making this again.

Morning
I have been hiding LOL. Had my doctor's appt last Monday and things went really well. This is the first appt since I started the new Low Carb High Fat lifestyle. For the most part my blood work was good except I am borderline anemic which isn't good. He thinks I might have a small ulcer that is bleeding hence that is causing me to be anemic. See another dr on the 16 for that. But the best part is I have lost 50 pounds. That is the best part and most depressing part too. I thought, hoped that just losing some of the weight I would be able to move better and not be in so much pain, but hasn't happened yet. I am trying to not let it depress me but not working so good. I am pluggin' away still.
Had a few not so good recipes from Pinterest this week. First one is Cheeseburger Gnocchi. Now in my opinion when something is called Cheeseburger, it should taste similar to a cheeseburger. This didn't at all. This was a combination of Mexican meets Italian. I didn't care for it at all, neither did my husband. 2 Stars

Here was another miss for me, Edna Mae Sour Cream Pancakes. My daughter liked them but I found them to be very bland. I think with some tweekin' they could be good. I did make them low carb by substituting flour for almond flour and oat flour. 2 Stars

Crawfish Dumpling Stew
This was good but my dumplings didn't come out right. But the broth was outrageous. I think the next time I make this I will use crab cause crawfish here are not that cheap and you have to get a lot of them. 3 Stars
I think it was more the cook than the recipe. LOL I will be trying this again thou.

Oh my
Can't believe it's been this long since I posted, like ten days. Didn't think it was that long. Hubby was on vacation last week from work so my days were a little off with him wandering around LOL. The weather last weekend was horrible here hot and humid which is not something I like at all. But then it cooled down the rest of last week.
I had a great mother's day and then on Monday was my husband's birthday. And we had his parents over for dinner.
One of Phil's favorite dishes is spaghetti with Parmesan crusted chicken. Kraft has new cheeses out one of them is Parmesan with Italian herbs, it's really good and was awesome on the chicken. Great dinner. Then I made him his favorite cake, yellow cake with chocolate frosting. This is the one I made.

THe recipe is from Vintage Mixer
I changed it a bit, added a box of vanilla pudding to the cake mix only half the sugar. The chocolate frosting I didn't heat up, just melted the butter and mixed that with the cocoa powder then added the rest of the ingredients.
the cake came out really good from what I hear cause I don't like cake and it's not part of my lifestyle anymore. But Phil loved it and so did his parents. 5 Stars
The rest of the week is kind of like a blur I can't really remember what I made so that must mean they where all that great or remember-able. LOL
I do know I made this for lunch and it was awesome.

I made it the way the recipe is written except from the asparagus cause I didn't have any so I used green beans, it was so good. 4 Stars
Can't remember what I made Tuesday night for dinner LOL but I know on Wednesday we had Chicken and Mushroom Fricassee and it was really good. My husband loved it so much he ate all of it. 5 Stars

I made the recipe as it was. Great recipe. My husband took the leftover sauce the next day and added some roasted Turkey breast we had.
Thursday night is another blank on what we had for dinner. Too funny
Friday night I made fish, haddock to be exact. And this is the recipe I used

Then on Sunday cause Saturday is the one day a week that I let myself have carbs and it's usually when my daughter want's to order out. I try anyways.
Sunday we had my husband's parents over for dinner cause his dad fixed up a wagon for me and did a gorgeous job of it too. And he wanted Goulash. So that is what I made.

This was really good. The only thing I did different was I didn't let it sit for 30 minutes after it was done cooking. Wonderful flavor this dish has. Loved it.

Shrimp Burgers
I made them and they came out awesome. We really liked them a lot. My picture isn't the greatest. 5 Stars
This is what I put in my burgers
1 pound of 30 - 40 shrimp
2 tbsp mayo
1 tbsp chili sauce
few dashes of hot sauce
1/2 tsp Old bay seasoning
few grinds of pepper
3 scallions
1 big clove of garlic
juice of 1/2 lemon
zest of a whole lemon
1 egg
1 cup panko bread crumbs
clean and devain your shrimp and divide in half
rough chop your scallions and garlic
put scallions and garlic in food processor and chop finely
add half you shrimp and process till you have a paste
cut up the other half of your shrimp and add to the shrimp paste
add the lemon juice, zest old bay seasoning, pepper, egg and,
bread crumbs. mix well
form into 4 shrimp burgers, put in the frig for at least an hour.
Fry on the stove for about 5 minutes on each side till nice and golden
brown and cooked thru,
add your sauce, tomato and lettuce.
Sauce
Mix in a small bowl the mayo, chili sauce, old by seasoning, pepper
the half of the lemon juice and a few dashes of hot sauce to your liking.
Use hamburger buns for those not doing low carb. ENJOY we did

Golden Shrimp SHells
Golden Shrimp Shells

Ingredients
- 1
- tablespoon olive or vegetable oil
- 1 1/2
- cups frozen cooked salad shrimp, thawed, rinsed and drained (from 7-oz package)
- 1
- tablespoon finely chopped fresh parsley
- 1/4
- teaspoon red pepper sauce
- 1
- clove garlic, finely chopped
- 1
- can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
- 1
- tablespoon grated Parmesan cheese
- Cocktail sauce
1Heat oven to 375°F. In 10-inch nonstick skillet, heat oil over medium-high heat until hot. Stir-fry shrimp, parsley, pepper sauce and garlic in oil 1 minute. Remove from heat.
2Remove dough from can; do not unroll. Cut into 24 slices; place 1 inch apart, cut side down, on ungreased cookie sheet. Press half of each dough slice to flatten. Place about 1 teaspoon shrimp mixture on flattened half of each slice. Fold remaining half of dough slice over shrimp; do not seal (openings may occur between dough layers). Sprinkle each with Parmesan cheese.
3Bake 11 to 13 minutes or until golden brown. Serve warm with cocktail sauce.
Coconut Shrimp

Ingredients
- 1
- lb uncooked peeled deveined medium shrimp (31 to 35), thawed if frozen, tail shells removed
- 1
- cup Original Bisquick® mix
- 1
- egg
- 3/4
- cup milk
- 1
- cup vegetable oil
- 2 1/2
- cups flaked coconut
- 1/2
- cup chili sauce
- 1/2
- cup apricot preserves
- Directions
- 1Pat shrimp dry with paper towels. In medium bowl, mix Bisquick mix, egg and milk. Add shrimp; gently stir to coat well.
- 2In 10-inch skillet, heat oil over medium heat to 375°F. In shallow dish, place half of the coconut (add remaining coconut after coating half of the shrimp). Cooking in batches, remove shrimp one at a time from batter and coat with coconut; place in oil in a single layer. Cook 3 to 4 minutes, turning once, until coating is crispy and golden brown and shrimp are pink (cut 1 shrimp open to check doneness). Drain on paper towels.
- 3In small bowl, mix chili sauce and apricot preserves. Serve shrimp with sauce for dipping.
