Haven't felt much like posting lately. Been kind of depressed about my weight and everything else. Been really tired this week which doesn't help cause when I am over tired I am very emotional and could cry at the drop of a hat and I get upset so easily with anything LOL.
Meals haven't been too complicated cause it's been just too darn hot and humid here this week.

I decided I was going to try peanut flour cause I am still on that quest for the right English muffin for low carb. Let's just say I know why people don't use peanut flour for baking LMBO. The two things I made both came out rubbery and very very dry. GROSS.  So back to the drawing board and some day I will figure it out. One that toasts up great but doesn't taste gritty, that is my biggest problem. I don't like that gritty texture in my mouth.
This morning I tried a baking mix I found online. Basic Low Carb Flour Mix by Character Ink's blog. This was my second try with this mix. Yesterday I made a pumpkin chocolate muffin/cake and it was good, need way more spice for my liking but it was good. I like my pumpkin pie spicy. I got the recipe from Running with Spoons blog.  3 Stars

The only dinner recipe I tried this week from Pinterest was this one. I made Cuban Mojo Pork Sandwiches. They were good but I was a bit disappointed with the flavor. I would have like more of the marinate flavors in the meat. The pork however was very juicy and tender.  3 Stars
