Beginning of a new life style change

Yes I have decided it's time to change the way I am living. I am not very happy and tired of all the pain I am in. Nobody understands how much pain I am in every day and I just can't deal with it any more. Back in Nov I talked with my doctor about the bariatric surgery, we decided I would call in Feb to start the work on getting the surgery done. He also suggested to me since cutting my calories wasn't doing anything to lose weight. I can't exercise cause the pain in my knees and feet is just to great and my knees give out too much. He suggest a low carb high fat diet. So that is what I am trying.  I have been doing it a few days a week for the last month to get my body use it, plus didn't have the money to buy all the replacements you need for flour.  No more flour, white rice, pasta, potatoes, bread or processed foods. I had stopped a while back to getting processed food for the most part.

As of this week, I am going all low carb. I am doing pretty good on the life style change. Thou can't say too much for my husband, but I do give him credit he did try some of the things I have made, didn't care for them but he tried them. LOL

So all the recipes I am going to post will be ones that i have found on Pinterest for my low carb/high fat life style change. I won't lie the first few times I tried breakfast and lunch low carb was not easy cause I was starving a couple hours later, but now it seems as long as I eat enough protein I am good till the next meal. I am proud of myself.

Today I tried this Minute French Toast. Recipe by Up Late Anyway.

Ingredients
  1. 3 tbsp plus 1 heaping tsp almond flour
  2. 2 tsp coconut flour
  3. 1/4 tsp baking powder
  4. 1/2 tsp cinnamon (add half to batter and use the other half on top)
  5. 3 tbsp sugar free maple syrup
  6. 1 tsp vanilla extract
  7. 1 tbsp butter
  8. 1 egg
Instructions
Crack egg into coffee mug, mix in all ingredients EXCEPT for the butter.
When the batter is smooth and completely mixed, then add your tablespoon of butter right into the center. No need to mix it in or melt it first.
Microwave for 1 to 2 minutes, depending on your microwave strength. When it's done it should still be soft and spongy.
Carefully slice it in half and stick the two halves in the toaster (I pan fry this after microwaving. Our toaster tends to trap this in the slots and makes it difficult to get out after toasting.)
Top with more butter, cinnamon, sweetener or sugar free pancake syrup.
