I am back

Nobody reads by blog anyways, but I am going to try to get back into blogging. IT's been a tough year and I went back to crocheting, was sick for 4 months. Then the holidays.

This week for dinner I made this dish Rosemary Chicken with mushrooms and caramelized onions. This was so good, the gravy was flavorful.  I didn't use the flour to coat the chicken cause I am still doing the low carb lifestyle. I did however use flour to thicken my gravy as you normally don't eat all the gravy. At least I don't. It's definitely worth a try. Here is the link for the recipe.

Two Minute Microwave Coffee Cake

Last night's dinner was just dinner LOL no recipe, steak seasoned with all purpose seasoning salt, veggies in copy cat recipe of Olive Gardens dressing. Husband and daughter had salad. That is it, boring

For breakfast thou, getting a bit tired of eggs and bacon, there is only so many ways and they still end up being just eggs and bacon LOL. So I decided to try Ginny's two minute coffee cake.
5 star recipe, it's by Ginny's Low Carb Kitchen. She has some great 
recipes if you get  chance check out her blog. This was really good, but a bit 
sweet for me, next time I just need to cut the sugar in half. I really liked it.

Low Carb bread

As you know this has been one of my missions since I have started this lifestyle. Now I am not biggest bread eater but I am a picky bread eater. I miss it most with my eggs in the morning. I have finally made a bread that I really like.  I can't take all the credit for the bread cause it started with someone's recipe.
The best part is that you cook it in the microwave. YES fast and easy can't be better than that. The original recipe French Toast in a Bowl by Brianna Thomas .
This is my recipe for the bread. I didn't think to take a picture, if I remember in the morning I will make another piece and take pics.

Microwave Low Carb Bread

3 T oat fiber
1 T ground golden flax - sometimes I use this, it gives a bit of texture. Most times I use 1 Tbsp of Psyllium Husk plain
½ tsp. baking powder
1/8 tsp  xanthan gum - this is used to make the bread not crumbly. It works 
1 egg
¼ cup water
1 T butter, softened
pitch of salt
I melt the butter a little bit, mix with the egg and water. Mix all the dry ingredient together then add the wet ingredients. Put in a square microwave container. I used a sandwich keeper, looks like a piece of bread. I cook my for a minute and 10 secs which is perfect in my microwave, you will have to see in yours how long it takes. Start at one minute and if the center isn't cook, put in for another 10 secs and keep going till it's cooked.  Try it's delicious 

Best Ever Baked Pork Chops

These were really good, very tasty pork chops. Now my husband said they were the best pork chops I have ever made, even my daughter ate them. She is the toughest critic to please. If you get a chance try them, they are good. 5 star
These are not low carb but you can make them that. Use Almond flour instead of the bread crumbs or low carb bread.

Oh Bad Me

I have been lacking in the blogging mood lately, can't believe it's been over a month since I last posted. I have been busy crocheting and trying to clean my house, it's just so dirty full of crap. I haven't cooked too many recipes off pinterest, been cooking some favorites. Sometimes I go thru moods where I just don't feel like being creative. It's rather frustrating when you spend the time and money to make a recipes and it turns out just OK. Very disappointing

Now my husband is not a fan of veggies what so ever, he will eat broccoli but only when it's hot LOL. This has become his favorite veggie to eat this way thou. LOL
This is really good 

I was in the mood for a nice stuff pork roast, it's getting cooler here so that makes in the mood for hearty, hot meals.

Baked Sour Cream Doughnuts

I had been craving some plain donuts, yes I am a very plain kind of girl. I love plain donuts. Couldn't find a recipe that was low carb and plain. I found this one. I love sour cream so I tried this recipe. These were good but way to sweet for me. I know the next time I make them I will cut the sugar in half. I did however take one of the donuts the next day and cut it in half and toasted it, then put egg, bacon and cheese on it. It was kind of like eating the McGrindle from McDonald's. It was sweet like that but mapley LOL, It was good thou. And I didn't put the glaze on the donuts either. I give it a 3 rating but will be back once I take half the sugar out and see how they are.

Crispy Oven Fried Fish Bites

I love fish, I could eat it every other day, that along with chicken. These were good. The tarter sauce is awesome. I always made homemade tarter sauce but it was just mayo and sweet pickle relish, plain and simple. This one on the other hand was out standing. Loved it.  I give this recipe a 5 star. Now you can make this low carb by using almond flour or your own low carb flour of choice. My daughter on the other hand had other ideas, she wanted the panko for super crunchy fish and that is what I made for everyone.
